Meyer Lemon Cookie Recipe

Up early with cookies baking for the school's parent "cafe" this morning. Don't you just love the smell of meyer lemons?! These are delicious little sugar cookies with a shiny lemon glaze, perfect for coffee or tea.
Dough:
Sift together
2 1/4c flour
1/2tsp salt
1/2tsp baking soda
Cream together
1/2c unsalted butter
3/4c sugar
and then add and cream together
1 egg
1tsp vanilla
1 1/2tbs zest of meyer lemon (about 3)
Slowly add to dry ingredients, bring dough into a ball, cover and refrigerate for about 1/2 hour. Preheat oven to 375. Make tablespoon size balls and flatten with bottom of jar onto ungreased sheet and bake until lightly brown around edges. Let cool briefly on sheet before moving to rack. Mix 2 tablespoons lemon juice, 1 cup powdered sugar and 1 tablespoon zest to glaze cookies. Set cooling rack over foil to catch drips, glaze and let set before movingDSCN3278.jpg
